CHARLOTTE, N.C. — Today in the Charlotte Today Kitchen we made a quick and easy Halloween soup.
All dressed up and ready for Halloween no one wants to spend their time in the kitchen....not even Ms. Claus (a.k.a. Chef Jill Aker-Ray). “ I have always enjoyed making this “7 Can Enchilada Soup for the holidays” says Chef Jill Aker Ray. Adding: "it's a cozy, quick soup, perfect to throw together especially on holiday like Halloween. This soup is easy and you’ll be done in very little time so you can have fun this Halloween - trick or treating and not have to worry about dinner.”

“7 Can” Chicken Enchilada Halloween Soup
Ingredients:
- 1 can reduced sodium black beans
- 1 can pinto beans
- 1 can petite diced tomatoes or Rotel
- 1 can sweet corn ( I like fiesta style) , drained
- 1 can (5 or 19/12 oz)white chicken breast, drained
- 1 can green or red enchilada sauce
- 1 can chicken broth
- 1 packet taco seasoning
Directions:
Add all items above to a soup or stock pot.
Give them a good stir and simmer on medium heat for 20-30 minutes.
Serve with tortilla strips, sliced or diced avocado, cilantro, cheese or sour cream.
