Bison Lettuce Cups: Makes 10 Bison Cups
Ingredients
5 Romaine Leaves
1 Ib. Ground Bison Beef
1/2 onion
Salt/Pepper to taste
2 Avocados
2 Red Peppers
2 Cups of Shredded Goat Cheese
Directions:
Cut Romaine Leaves in half to make “lettuce cups”
Brown the beef together with chopped onion on stovetop
Assemble Beef/Chopped Onions inside lettuce cup
Add additional toppings
Suggested Toppings:
Cut Avocado into cubes to serve as a topping
Chop Red Peppers
Shredded Goat Cheese
Cuban Black Beans
Ingredients:
½ tsp. apple cider vinegar
¾ cup dices onion
15 ounce black bean can, drained and minced
2 cloves garlic minced
1 jalapeno, minced
½ tsp. oregano
½ tsp. cumin
Direction
1. Place all ingredients into a large mixing bowl. Stir well to distribute all the ingredients evenly.
2. Pour evenly in the crock pot.
3. 3. Cook on low for 6-8 hours.
Stir before servings.
