Enjoy the 4th of July with food ideas from Ernie's BBQ

July 4th recipes you'll want to add to your party

CHARLOTTE, N.C. — The 4th of July is a very special holiday where many people will gather and celebrate our country’s independence.  We’ve invited the grill master Ernie Adler to share some of his 4th  of July recipe.  “I love grilling and I love this holiday where you gather around food and celebrate with your love ones”  says Adler.  He adds” I have some recipe suggestions that I think your family and friends will love.”   First up nothing says celebration more than a cookout. Today we’ll kick it up a notch with some South Carolina Style Chicken, with Lime Cilantro Grilled Corn with a kick, and a Cast Iron Berry Crumble. Here is what you need to know:

South Carolina Style Chicken  - whisk yellow mustard, Worcestershire sauce, salt, pepper, hot sauce, brown sugar, and apple cider vinegar in melted butter. Trim excess fat from the bone in chicken thighs, then rub the marinade into the chicken and refrigerate for at least one hour up to overnight. Reserve some of the marinade for basting later on. Heat your grill to 325 degrees and grill until internal temperature reaches 165 degrees, baste one time with marinade and serve.

Lime Cilantro Grilled Corn - remove the husk and silk, heat grill to 425 degrees, brush lightly with vegetable oil and grill turning every few minutes until cooked and slightly charred. While cooking combine chili powder, cumin, coriander, paprika, oregano, garlic powder and cinnamon. When the corn is done sprinkle the seasoning over the corn and them either crumbled queso fresco or cotija.

Cast Iron Berry Crumble – it is dessert time featuring  a cast iron berry crumble.  Use your favorite berry for this dish.  Today we have blueberries and cut up strawberries as the star of the dish. Toss them with some cornstarch and salt, and sugar and then in a separate bowl combine oats, flour, salt, cinnamon, brown sugar, white sugar, and cut up butter until fully blended. Cook on 350 degrees until bubbly and warm, top with vanilla ice cream and a dash of cinnamon.
