Healthy peanut butter cups and granola bites

Crunchy, Low-Carb, High-Protein Granola Bites

These, crunchy, “poppable,” low-carb granola bites are a perfect snack to have on hand when hunger strikes. They are flavorful, crunchy, and require no baking.

Makes: 18 servings

Prep time: 10 minutes plus chilling

-Ingredients

3 cups (270 g) Sola Vanilla Almond Granola

½ stick unsalted butter

2 tablespoons Sola sweetener

2 tablespoons unsweetened almond butter

¼ cup unflavored protein powder of your choice (I use soy protein)

 

Chocolate flavor variation

Replace the Vanilla Almond Granola with Sola Double Chocolate Granola

Add 2 tablespoons unsweetened cocoa powder

 

Special equipment needed: Mini muffin pan

 

-Directions

 

1. Place the granola into a zip-top plastic bag and use a rolling pin to smash it into smaller pieces, but do not pulverize into powder. Pour the granola pieces into a large mixing bowl.

 

2. Heat the butter in a pan or the microwave until melted, add the Sola sweetener, and stir well until  dissolved.

 

3. Pour the melted butter mixture into the granola and add the almond butter and protein powder (if making the chocolate flavor, add the cocoa powder at this point). Mix well and pour into a non-stick mini muffin pan. Divide the mixture between 18 cavities and press down with the palm of your hand to compress the mixture.  Place into the refrigerator to chill for at least one hour.

 

4. To remove the granola bites from the pan, simply heat up the bottom of the pan briefly on the stove or using a blow torch, and tap the granola bites out of the pan. 

 

5. Store the granola bites in the refrigerator.

Chocolate-Peanut Butter Cup Fat Bombs

Prep time: 30 minutes plus chilling

-Ingredients

Chocolate Coating

14 ounces (400 g) no added sugar dark chocolate (we like Lily’s brand)

Peanut Butter Filling

2 tablespoons heavy cream

3 tablespoons Sola sweetener

½ teaspoon sea salt

½ teaspoon vanilla extract

1 cup (255 g) smooth, no added sugar peanut butter

½ cup (50 g) powdered peanut butter

Secial equipment needed: Mini muffin pan and paper or silicone mini muffin cups

-Directions

1. Place the chocolate in a microwave-safe bowl, and melt in the microwave (or use a bowl over a pan of lightly simmering water). Stir thoroughly until smooth and glossy.

2. Place the heavy cream, Sola sweetener, salt, and vanilla into a microwave-safe bowl and mix well. Microwave on full power for 30-45 seconds until the cream is hot, then stir well until the Sola sweetener and salt have dissolved.

3. Place the peanut butter, powdered peanut butter, and cream mixture into a mixing bowl and stir the ingredients together until a soft dough is formed. Remove from the mixing bowl and roll into a cylinder shape, slightly smaller in diameter than that of a mini muffin cup.

4. Place the muffin cups into the muffin pan, use a spoon to coat the bottom of each mini muffin cups with a layer or chocolate. and place in the freezer for 10 minutes until the chocolate is set.

5. Cut the peanut “dough” into 24 pieces and place each piece into a muffin cup. Spoon the remaining melted chocolate on the tops and down the sides of each cup. Place the pan in the refrigerator for 2 to 3 hours until firm. Remove the chocolates from the cups and enjoy!
