She adds “the Rose’ has a cherry, berry and hint of floral to its taste.” While Prosecco is renowned for its sparkling version, there has been a come-back of still Prosecco. The production of still Prosecco involves fermenting the wine in tanks, similar to the Charmat method, but without the second fermentation that creates the bubbles.
Prosecco can also be categorized into one of the following six sweetness levels: Brut Nature, Extra Brut, Brut, Extra Dry, Dry, Semi-Secco (or Demi-Sec), or Dolce. Finally, these different Prosecco are divided into three quality levels. “That means that each bottle must be labeled with a DOC or DOCG seal” says Lapides. He adds “depending on the seal, the product must meet certain grape quality criteria like growing in certain regions, at minimum altitudes, and at certain soil conditions.” Delicious on its own, Prosecco is also the perfect choice for tasty, lower alcohol cocktails that can also stretch your entertaining budget. Prosecco is versatile to say the least and it takes the guesswork out of food & wine pairings!
